Vegan Pasta

Curly Pasta with Vegetables

This a recipe that I did for the photo shoot

1 pound curly pasta
¼ cup each of cut vegetables- you can use your choice of 4-5 of your favorite vegetables. For the recipe I used

Orange and yellow capsicum, broccoli robe, carrots, yellow squash, zucchini, snow peas, scallions, Thai red and green peppers.

2-3 Tsp of olive oil
Crushed black pepper corns
1 Tsp of finely chopped fresh garlic

Cook pasta in a pot of sea salt water till its andante, save 3/4 cup of pasta water.

Sauté chopped garlic in olive oil for about 2 minutes, then add carrots and continue sautéing for about 7 minutes then add capsicum. Next add broccoli robes, Thai red and green peppers, Finally add the most delicate vegetables such as zucchini, yellow squash and scallions for another 2-3 minutes

Add about 3/4 cup of the pasta water into the vegetables along with the pasta and saute for 3 minutes.

Sprinkle with black pepper corns and serve.
